For dinner last night, I was thinking about how to get my greens and realized we needed to use up that asparagus. In the past, I have steamed asparagus in the microwave with lemon pepper seasoning or if I was feeling fancy, lemon juice, lemon zest, and cracked black pepper. That just didn't sound appetizing to me last night, so I quickly googled 'asparagus recipes' and found a recipe for oven roasted asparagus with mushrooms and fresh rosemary. It claimed the flavor combination was great. PERFECT! (because I also had a container of mushrooms that needed to be used up)
The recipe, of course, called for a ton of olive oil. I just ignored that, rinsed my asparagus, rinsed and quartered the mushrooms and put them on a baking sheet with a silicone mat. Unfortunately our fresh rosemary had gone bad (are you noticing a theme of me trying to use up stuff from the veggie drawer??), so I sprinkled everything with dried rosemary, sea salt, and cracked pepper. Popped it into the oven at 450F for 15 minutes and Voila! It was delicious!!! So much better than my steamed lemon pepper handling of asparagus.
We served it with a loaded bean burger and had a wonderful filling meal. We each went back for seconds and polished off all of the roasted asparagus, so over a pound of veggies for each of us. Every cell in our body was happy about that! Give it a try. I am sure you are seeing piles of asparagus everywhere at very low prices if you live in Michigan.
