I will be doing another FREE cooking demo at Nature's Gift Organic Market, located at 4306 N Saginaw Rd in Midland, tomorrow evening Tuesday, June 16th at 5:30pm.  You can call them at 989.835.4438 to reserve your spot.  Mark your calendars and come join the fun.  You are welcome to join in without a reservation, but you will be guaranteed a seat if you call ahead.  My classes there are pretty popular, so call ahead to get yourself a chair.

I will be whipping up some healthy, tasty homemade salad dressings to dress up all of your summer leafy greens and garden veggies.  I will also be sharing a heartier dish-to-pass type salad for summer picnics and barbecues.  We will have samples for everyone at the end.  All made with delicious healthy produce and ingredients from Nature's Gift Organic Market.  You will receive a handout with recipes and information on Jennifer Parsley Nutritional Healing.  I hope to see you there.

Blogging Again and a Class Offered Next Week

Hello friends!  I am still here, still eating a healthy vegan diet, and still recovering from shoulder surgery.  I am doing very well with physical therapy, but it is certainly a long and painful process.  I hope to be able to offer cooking demos and classes this summer, my physical therapist estimates I will be back to full strength by August.  LONG recovery, I know.  

I hope to never have to go through something like this again.  I am very happy that my healthy diet has allowed me to heal as quickly as possible and not put on any weight even with what seemed like months of basically being in bed.  I am working with my friend on a new exercise routine to build back some muscle tone and firm everything up before summer bathing suit season.  I have really missed regular workouts and yoga.  My friend is great at putting together workout routines and she will work around my still healing shoulder.  I am even considering hiring a personal trainer to get this body in tip top shape again.

I have been doing a lot of research and thinking about my business, Jennifer Parsley Nutritional Healing, during my recovery.  I have SO MANY great ideas floating around in my head and my research has revealed some exciting new action plans for 2015, some I have started, some are yet to come.  Look for great new coaching services and potentially online nutrition classes as well.  Such exciting stuff!  I am BACK and will be blogging at least weekly again, so you can hear all about my exciting new business plans, see what I am cooking, get recipes, see the results of my exercise efforts, all sorts of fun updates.  Stay tuned and let me know if there are any specific topics you would love to have me blog about.

On another note, I am BACK to teaching a few classes as well.  My next class is coming up this Tuesday, March 31st, at Ways To Wellness downtown Midland.

All About Food Additives

This course gives you information on the food additives found in almost all packaged foods in the grocery store today.  We will review the categories of additives, such as MSG derivatives, food dyes, preservatives, and flavor enhancers.  We will review how these additives can impact your health, energy levels, cravings, and addictions.  You will learn what to look for as you are buying and preparing foods for your family.

We will talk about shopping for, preparing, and packing healthy meals for home, work, and school.  You can avoid harmful food additives and improve the quality of food for your whole family.

Sustainable Weight Loss class offered this Wednesday evening, January 7th, at Ways To Wellness

Join me as I share the dietary changes that helped me finally reach my weight goal.  I have tried many, many, many diets in my life and was usually left feeling HUNGRY and wanting to eat the paint off the walls!  With this lifestyle change to a whole foods plant based diet, I was finally able to reach a very desirable goal weight and maintain it for well over a year so far.  I don't feel hungry, I don't count calories, carbs, fat grams, or anything else.  I am not obsessed with exercise and don't even recommend it at first.  I focus on eating the healthiest foods on the planet and eat as much as I like.  

In this class, I will share advice from top doctors in the area of plant based nutrition on the benefits of this type of diet, not only for sustainable weight loss, but for preventing and reversing chronic disease, increasing energy, and generally feeling better.  I share practical advice on how to implement this diet plan including recipes, meal plans, and support.  If you have a lot of weight to lose, you can EXPECT to lose 10 pounds per month or more, every month, until you reach your goal.  As my favorite plant based doctor, Dr. John McDougall says, "It's The Food."

Our Christmas Day Protective Diet Feast

Hello friends.  I hope everyone enjoyed your holiday celebrations, we certainly did.  I thought I would share a few pictures and descriptions of the healthy delicious meals/feasts we had on Christmas Day.  We spent Christmas Eve with family and had all day on Christmas Day to ourselves.  I had planned out recipes and did a huge grocery shop early in the week.  I also did some prep earlier in the week so we could have a fairly restful Christmas Day.  

We started the day with gingerbread scones.  This is an adaptation of the Protective Diet (PD) Lemon Blueberry Scones where you leave out those flavors and substitute with gingerbread spices.  They turned out beautifully.  We enjoyed them topped with PD Soy Yogurt which tastes like cream to me now that my tastebuds have adapted to not being overloaded with sugar/fat/salt which is packed into everything in a Standard American Diet (SAD).  We didn't go overboard on breakfast as we knew we would have  big dinner.  We had breakfast quite late, enjoyed at a leisurely pace with a cup of tea.

For our main Christmas Day meal, we assembled (some things were pre-prepared) all of the following PD recipes:
  • Holiday Loaf
  • Mushroom Gravy
  • Roasted Potatoes (just cut into quarters, put face down on a baking sheet, roast in the oven at 400-425 degrees for about 40-45 minutes, they get all browned and lovely)
  • Stuff Yourself Stuffing
  • Green Bean Casserole
  • Cranberry Sauce
The picture above is actually of a plate of leftovers, because I forgot to take a picture of my Christmas dinner.  The leftovers heat up wonderfully and we have plenty of them!  We may freeze some as well.  All of the effort to make these healthy vegan versions of traditional recipes was so worth it.  We had a wonderful meal early in the evening, then enjoyed watching some classic Christmas movies with a lovely fire blazing.

To end the day, we made a Chocolate Cherry Cake with a sweet potato based chocolate frosting.  The cake is 2 layers with a layer of sweet dark cherry filling.  This was so good!  We have lots leftover and I have been snacking on it all week.  It is a Protective Diet recipe, so I know it is healthy for me and have a slice without the guilt any time I like.  I am so looking forward to sharing the details of this sustainable weight loss plan at my January 7th weight loss class at Ways To Wellness.  I will share details on the class soon.

A Big Pan of Healthy Scalloped Potatoes

Lately I have been choosing recipes to use up the last of our local organic CSA vegetables.  We had a big end of season pick up where we received a few bushels of fruits & vegetables.  Hence the Apple Pie, the Butternut Squash Pasta Bake (featured in my November newsletter) and this week's big pan of Scalloped Potatoes.

We have quite a few local organic potatoes left and this is a hearty dish for cold fall weather.  This is a Protective Diet version of scalloped potatoes, so all healthy low fat whole foods plant based ingredients.  Julie of Protective Diet specializes in healthy versions of comfort food favorites and this recipe fits the bill.  Eating this type of food every day keeps us full and satisfied and not wanting to eat any high fat processed junk.

Next week I will be teaching a course on Preventing & Reversing Diabetes at Ways to Wellness downtown Midland.  Check out the Education section of my site for more details.  I am scaling back the number of classes that I offer for a few reasons: 

1. I recently found out I have a torn rotator cuff and torn labrum in my right shoulder and will be having shoulder surgery in early January.  That will slow me down for a bit.
2. I am rethinking my business model.  I want to find the best ways to help people improve their health with dietary changes, while having balance in my life. 

I will be using time over the winter and while healing my shoulder to figure out where to go next.  I will most likely be blogging more often and seeing where that leads.  I will be creating recipes and probably revamping my website a bit for better access to my recipes.  I will be blogging soon about a new 30 day challenge for myself.

Free Cooking Demo in Coleman Tomorrow

On Saturday, September 27th at 3pm, I will be doing a demo at Bean Me Up Coffee Shop in Coleman, located at 231 E Railway Street.

I will be partnering with Janet Roman, a Naturopathic Doctor in Coleman, Michigan for this demo a bit further West of Midland.  This will be part of the Coleman Business Association's event, Walk Through Town.  Janet will be giving a talk about enzymes from 2-3pm and I will be doing a cooking demo from 3-4pm.  

I will be making a healthy vegan version of the picnic & potluck favorite - Creamy Macaroni Salad.  It will have lots of fresh raw veggies which are full of healthy enzymes to help our digestive systems.  Come check it out and get a sample of pasta salad and information on my upcoming courses and events.
