If you're looking for a cool refreshing healthy summer treat, just freeze some fruit and blend it up with a splash of plant milk. Watermelon is everywhere these days and a great bargain, usually under $3 for a huge melon that makes a pile of nutrient and antioxidant rich fruit for snacking or smoothies. I wanted to buy a melon at Meijer the last time I went grocery shopping, but I remembered I still have a bag of frozen watermelon cubes from my CSA farmer from last summer.
We received so much watermelon last year I couldn't keep up. Luckily my friend Mel told me to just freeze cubes of cut up watermelon. It's great as a treat straight from the freezer, her kids and the neighborhood kids gobble it up while running around playing. Sort of like a healthy popsicle.
I tried a few cubes that way and it was so sweet and delicious that I only needed 1 or 2 for dessert. Which is great for a calorie dilute sweet dessert to help with weight loss, but not so great for using up a couple of big freezer bags of watermelon.
My watermelon slushie is a way to use up 1-2 cups at a time so I can get through my stash and start buying fresh watermelons for fresh fruit snacking. Here is the recipe, pretty darned easy:
1 frozen banana*
1-2 cups of frozen watermelon chunks
~1/2 cup of soy milk or other plant based milk
Blend everything up in a blender, pour into a glass, and enjoy with a spoon. It is so sweet and creamy, it makes a great dessert or refreshing snack on a hot summer day.
*I always keep tons of frozen bananas on hand as I use them to sweeten my healthy low fat vegan baked goods. You just let your bananas get really ripe and brown. Peel and place as many as you can into a Ziploc freezer bag. I always have 1 or 2 'banana bags' going in my freezer.
