Just last week we had Simon's youngest sister, Kirsty, her husband Vince, and their friend (now our new friend) Kim visiting from England. I will do a separate post with details from that visit. We had two days to clean and prep the Parsley Memphis B&B for our next round of guests, my Dad and Stepmom, who arrive tomorrow morning.
We have other awesome news which requires a weekend away, more on that in a later blog post. We are leaving for the UK in about 4 weeks for Simon's sister Bethan's wedding. On that trip we are also visiting friends in Cardiff and spending a few days in Glastonbury.
Whew! This is why I haven't been blogging. No excuse really, but this year is just flying by. Filled with all sorts of fun and exciting things for the Parsleys, but definitely a busy, busy year so far.
This blog post is just a quick check in. I will be back with more details, pictures, food, fun, music, etc. etc.
Here is a picture of my sweet husband and I enjoying a Mississippi Riverboat Tour. We went on the tour with Kirsty, Vince, and Kim. We didn't join them in every bit of touristing, but Simon had never been on a riverboat tour and I had only been once from New Orleans about 15 years ago. We learned a lot of Memphis and Mississippi River history.
My last topic for this quick post. We have started receiving our CSA Veggie share every week from Roots Memphis, a collective of local organic farmers. We pick up a bag of beautiful veggies every week at the Cooper Young Farmers Market about 2 blocks from our house.
The picture at the top of this blog post is of little radish sandwiches we made with our local CSA radishes, CSA fresh pea shoots (delicious, I love those so much!), a bit of avocado, salt, pepper, and toasted homemade sourdough bread that we get from St. Honore Bakery, a lovely couple who sell breads and sweets at a stall at the end of our road. We also made creamy mustard herb potato salad with more of our CSA radishes.
Below are a few pictures of tonight's dinner - fresh lovely Vietnamese Spring Rolls which had red onion, carrot, cucumber, avocado, cilantro, CSA baby lettuce mix and toasted sesame seeds. We made half with a rice blend and half with noodles to add some more starch to all of those veggies. Wrapped up in rice paper wrapper and dipped into a lovely little sweetened soy sauce with fresh lime juice and red pepper flakes. Mmmmm! Dinner was so good tonight.
We have been making tons of great meals at home with our CSA veggies, I do plan to share plenty more along with recipes and life updates. I guess my life isn't slowing down anytime soon, so I will just have to make time to blog like I did tonight.
