Exercise: FIRM Workout Video. I DID NOT want to do this! I rationalized a million excuses for skipping a workout yesterday, but in the end I just banged out the workout while Simon was in a work meeting last night and 'got 'er done'. I did feel good afterwards, I don't know why I whine and cry and resist so much.
Breakfast: Large bowl of overnight oats with soy milk, banana & cinnamon, tea. The oats were great with cinnamon instead of vanilla, I think I found a new favorite combination.
Lunch: I wanted tostadas or tacos and we didn't have any beans or bean dip, so I improvised because we had lots of leftover mashed potatoes. I made potato tacos and they were delicious! I packed them up with a in a lunch bag with a heat pack to keep them warm as I ran a ton of errands yesterday. When I finally had them at 3:30pm, they were still warm and so delicious. 3 tacos with mashed potato, PD Salsa Molcajete & PD Onion Dip.
Snack: Cranberry Orange Muffin with hibiscus tea
Dinner: PD Pasta with Tomato Cream Sauce - this is a quick & easy weeknight dinner recipe and so delicious and filling like all of the PD recipes.

Mindfulness: I did better yesterday with reducing portions and listening to my hunger signals. Not perfect yet, some portions are still a bit big, but doing better.
I am running around doing a million things again today. I do plan to get some exercise in, maybe another bike ride with the dog if it's not raining or snowing. Then we are cooking up a storm tonight to have everything prepped and ready to pop into the oven in the morning. We are driving to Detroit area for our big family get together and bringing some healthy vegan dishes - PD Holiday Loaf, PD Mushroom Gravy, and PD Stuff Yourself Stuffing.
