My eating yesterday was very good. I had overnight oats (Old Fashioned rolled oats soaked overnight with soy milk, banana, and a splash of vanilla) and green tea for breakfast, tostadas for lunch, hibiscus tea and an apple oat muffin for an afternoon snack, and cheezy broccoli rice (brown rice & broccoli mixed with PD Cheezy Sauce), which is in today's photo, for dinner.
My focus on mindfulness, slowing down, sitting down to a meal with no distractions has been very helpful. I wanted to have my snack while doing things on the laptop, but I moved into the kitchen and focused on the fact that I was having tea and a healthy muffin. I actually recognized the fact that I was eating, enjoyed it, and felt satisfied, instead of gulping it down while being distracted. I had no sugar cravings or burning need for some sort of dessert. I think this was because I was eating more slowly and really savoring each meal or snack.
So, great progress! I am trying to remember to take a picture each time I eat and hopefully this will turn into a bit of a photo journal of a month's worth of my food as well. So, when people find out you are a low fat whole foods vegan and ask...What Do You Eat?!?!? You can point them my way to show all of the healthy delicious foods that we eat in a month.
