Here is a run down of my Day 2:
Exercise: Rest Day
Breakfast: Potato Wedges heated up in the toaster oven with healthy vegan mayo and malt vinegar, an apple, green tea.
Lunch: Mushroom Soup with added hulled barley that I cooked in the pressure cooker topped with a bunch of chopped fresh parsley.
Snack: Hibiscus tea and an Apple Oat Muffin.
Dinner: A white bean pesto burger (recipe from my Happy Herbivore Light & Lean cookbook) on an Ezekiel bun with greens & vegan mayo, Crispy Herb Fries dipped in mayo and homemade ketchup.
Mindfulness: This is helping me SO MUCH! I feel fuller on less food and am less tempted to randomly snack. I do enjoy a snack around 4pm as this is my 'hungry time' and Simon & I don't usually have dinner until 7-8pm. I am fine with a healthy snack to tide me over. I used to be awful about wanting something sweet or junk food while watching TV. We got rid of our satellite TV, but yesterday I was watching some Gaiam TV online shows (we can hook our laptop up to our TV screen). I was on the couch watching TV and that feeling of wanting to go for some sort of treat was there in the back of my mind. But I focused on mindfulness and my commitment to this 30 day challenge and just enjoyed the down time and had tea instead. Amazing for me!
I hope you are enjoying your weekend. I am going to get a workout in today and cook up some more delicious healthy food. Simon & I are also going to map out vacation plans for 2015 and possibly further. Great way to spend a Saturday :-)
