Here it is: scrub some potatoes, put them in a dry crock pot, let them cook for 5-6 hours on low. Done. End of story. Very little prep and no oven.
I made my potatoes in the Crock Pot yesterday. We have a new programmable Crock Pot that we received as a wedding gift. I set it for 5 hours on low, checked maybe once or twice and rearranged the potatoes a little. I had Simon check for doneness at 5 hours, he said a knife went in easily. He shut it off, I left it on the counter all night and had cooked cooled potatoes to cube up for a creamy delicious potato salad this morning.
The Protective Diet recipe linked here makes a huge batch of potato salad. Potatoes are so healthy and filling. The girls and I will enjoy this all weekend, as well as the BBQ bean burgers, BBQ baked beans, and Lemon Zucchini muffins that I am taking along. And a cheeky bottle of Australian Chardonnay of course ;-)
