My latest trick that I learned from Julie Marie Christensen from one of our Protective Diet Education classes is to make collard green burritos or wraps. For lunch today, I had a collard green wrap stuffed with Roasted Squash Curry and brown rice. It was a great way to use up leftovers and get extra greens into my diet.
All leafy greens are excellent for protecting the endothelium, the single cell lining of all of our blood vessels. Greens promote the release of nitric oxide in the endothelium which helps keep our blood vessels flexible and healthy. As many of the plant based doctors, nutritionists, and chefs say, "Eat Your Greens!" The more the better.

If you commit to the way of eating that Julie and I teach, you will steadily lose 10 lbs per month or more until you reach your goal weight. And you won't feel deprived or hungry. It has worked so well for me and is the only diet I have ever followed that allowed me to easily maintain a low goal weight without wanting to go off plan. I don't see it as a diet, it is my new lifestyle.
