Julie Marie Christensen from Protective Diet recently developed a recipe for Soft Pocket Bread and shared how she used to eat at a restaurant called Pockets where they made chopped salad mixed in the dressing of your choice and stuffed it into lovely soft pocket bread for a nice meal. I finally got around to making this combination and I LOVE IT!
Chopped salad is just taking any salad ingredients of your choosing and dicing everything up so you have small bite sized pieces. I really like this with the big boxes of organic salad greens. Those can be a mouthful with all of the leaves and stems, they are much more reasonable chopped up. It also seems like you get more salad dressing by coating your salad in a big bowl and stirring well before stuffing it in the pocket bread.
The beauty of eating a healthy plant based oil free diet is you don't need to restrict anymore. I can load up my salad with plenty of dressing. I remember the days of worrying about how much dressing I was using or measuring out a teaspoon or tablespoon or buying diet dressing full of sugar and additives or just dipping your fork in the dressing, always ordering it on the side. Do you remember those days??? Crazy-making diet days! I am so glad those days are over.
This lunch is really easy and filling. It is also easy to take on the go. I chop up and dress some salad and put it in a container, toast some bread and throw it in a Ziplock bag, and voila, lunch on the go. I take a napkin and fork with me and always have my water bottle as well.

We have also enjoyed it with Southwest Ranch Dressing and this week I made a batch of Daily Dressing which has a sweet onion flavor. Any healthy plant based oil free salad dressing that sounds good to YOU will work great for this idea.
If you don't want to make your own bread, look for pitas or pocket bread with clean ingredients - just whole wheat flour, water, salt, and yeast. That is all that should be in your bread, not a laundry list of chemicals and ingredients from The Man.
